Senior Sous chef
Role: Senior Sous Chef – 4 days on 3 days off
Operation: High volume fresh food restaurant
Location: Edinburgh
Package: £45K OTE
Ellis Mack is currently working with this well-established Edinburgh operator. If you are an eager and passionate chef this role is for you. This is a kitchen that prides itself on using the best local ingredients available. This is a very busy restaurant and will need a chef that has worked in this kind of operation. Offers great work life balance with 4 days on and 3 days off.
Role/Responsibilities :
• Ensure that section is up to date with all information within the business
• Reports to Head chef
• The completion of all food ordering relevant to business levels.
• To ensure volume of food cooked in accordance with business levels and ensuring minimum wastage at all times.
• To ensure that all food preparation and production is to the required standard.
• To ensure that any commis / demi chefs assigned to them are trained and duties clearly explained with supporting documentation.
• To complete all necessary documentation if required:
• All food correctly labelled and dated and duly stock rotated
• To ensure that surrounding kitchen areas and fridges are at all times clean and sanitised.
Skills/Experience:
• Have Sous/Junior Sous experience in a similarly high-volume operation.
• Possess a passion and knowledge for food.
• Be driven and focussed on first class standards across every aspect of the operation.
• Have shown loyalty and longevity throughout their career.
• Have excellent planning and organisational skills.
